Mystic Kombucha is a local company operated out of Capitol Hill. And I had the advantage of trying their VERY limited release of their first dry hopped kombucha. Mystic took several months to perfect their first dry hopped tea, brewed with grapefruit. That dedication does not go unnoticed! It was a true treat to drink a kombucha so well crafted.
Color: muted straw, lightly carbonated with active bubbles
Smell: citrus, dry hops, mellow barnyard funk
Taste: perfectly carbonated and not overwhelmingly fermented. Crisp, light, slightly sour, with juicy grapefruit and hop bitterness.
Overall: Complex flavor profiles for a tea that's equally as refreshing. And with sparkling wine characteristics, it's a perfect pairing for brunch!
